Zucchini Breakfast Bake

4 slices eureka!® Grainiac® Organic Bread, cubed

4 eggs

½ cup ricotta

½ cup parmesan, grated

Hot sauce, to taste

½ teaspoon salt

½ teaspoon pepper

1½ cups zucchini, grated

¼ cup basil, chopped

2 tablespoons red pepper, chopped

2 tablespoons orange pepper, chopped

Olive oil

  1. In a medium bowl, whisk eggs and ricotta until smooth. Add parmesan, hot sauce, salt, pepper, zucchini, basil and peppers to the egg mixture and mix until well combined.
  2. Preheat oven to 350ºF. Coat the bottom of a baking dish with olive oil and place bread cubes in the dish. Pour egg mixture evenly over bread, ensuring every piece is covered.
  3. Bake for 25-30 minutes. Remove, let cool for 10 minutes and enjoy!
