2 slices eureka!® Saaa-Wheat® Organic Bread, stale and cubed
½ cup milk
½ cup apple, cubed
½ cup golden raisins
Butter or nonstick cooking spray
1/4 cup unsalted butter, melted
1/2 cup dark brown sugar
3 tablespoons heavy whipped cream
2 tablespoons Kentucky bourbon whiskey
1. In a medium bowl, whisk eggs, milk, salt, cinnamon and vanilla. Soak bread into mixture. Spray skillet with cooking spray and Heat on medium low. Add bread mixture compacted together. Cover and let sit on low for 15-20 min or until bottom is golden brown. Flip to other side and cook for another 10-15 minutes or until golden brown.
2. To make teh Bourbon Sauce, first melt butter in small saucepan over medium heat. Whisk in brown sugar, heavy whipping cream and salt. Simmer until thickened, whisking often, about 3 minutes. Remove from heat and whisk in bourbon. Cool slightly. Serve the bread pudding with bourbon whiskey sauce on the side; pour on to taste.
**If you do not have stale bread, make some: Preheat oven to 350 degrees. Cube bread. Transfer bread to baking sheet. Bake until crisp and firm but not browned, about 15 minutes. Remove from oven and let cool.
