Roasted Veggie Holiday Tartines

3 slices eureka!® Sweet Baby Grains® Organic Bread, toasted

2 cups Brussels sprouts, finely chopped

2 tablespoons olive oil

2 tablespoons lemon juice

1 teaspoon garlic powder

Salt and pepper, to taste

2 avocados, mashed

¼ cup dried cranberries

¼ cup shredded parmesan

¼ cup balsamic glaze 

  1. In a medium mixing bowl, combine Brussels sprouts, olive oil, lemon juice, garlic powder, salt and pepper. Mix until well combined and set aside.
  2. Slice each bread slice in half diagonally. Spread avocado mash on each slice and top with Brussels sprouts and dried cranberries. Top each with parmesan and a drizzle of balsamic glaze.
