Pumpkin Stuffed French Toast

4 slices eureka!® Outta Sight White!™ Organic Bread

3 eggs

½ cup milk

2 teaspoon sugar, divided

½ teaspoon vanilla extract

½ teaspoon cinnamon

¼ teaspoon nutmeg, freshly grated

1 teaspoon sunflower oil

3¾ ounces canned pumpkin purée

1 tablespoon Greek yogurt

Maple syrup

Chopped walnuts

  1. In a large bowl, whisk together eggs, milk, half of the sugar, vanilla, cinnamon and nutmeg until well combined. Dunk 4 slices of bread in mixture, coating both sides.
  2. Heat sunflower oil in a large skillet over medium heat. Place coated bread slices in skillet and cook both sides until golden brown.
  3. In a medium bowl, combine pumpkin purée and Greek yogurt. Spoon mixture onto slices of French toast and top with second slices. Drizzle with syrup, confectioner’s sugar and chopped nuts as desired. Enjoy!
