2 slices eureka!® Sweet Baby Grains® Organic Bread
1½ tablespoons butter, divided
2 teaspoons minced garlic
½ tablespoons flour
¼ cup milk
½ ounce cream cheese
½ cup shredded mozzarella cheese
¼ teaspoon pepper
¼ teaspoon crushed red pepper flakes
¼ cup Greek yogurt
½ cup kale, chopped
½ cup artichoke hearts, chopped
2 slices Swiss cheese
- Melt ½ tablespoon of butter in a skillet over medium heat. Add garlic and stir for approximately 1 minute. Whisk in flour until it begins to make a paste. Add in milk and turn heat down to low.
- Add cream cheese, mozzarella, red pepper flakes, pepper and Greek yogurt and stir until smooth.
- In a separate pan, melt ½ tablespoon butter and place chopped kale in the pan. Sauté until it is slightly wilted. Add artichoke hearts and cook until heated through (approximately 3 minutes). Combine kale-artichoke mixture with cheese mixture and stir until thoroughly mixed.
- Spread remaining butter on 1 side of each bread slice. In a skillet over medium heat, place 1 slice of bread, butter side down. Layer on 1 slice of Swiss cheese, the kale-artichoke mixture, 1 more slice of Swiss cheese, and the remaining bread slice, butter side up. Cook until golden brown on bottom (approximately 3 minutes). Carefully flip and cook an additional 3 minutes.
