Cranberry Jalapeño Cheese Ball & Toast Points

3 slices eureka!® Grainiac® Organic Bread, quartered

1½ cup cranberries, diced

⅛ cup green onion, chopped

⅛ cup cilantro, chopped

½ jalapeño, seeded and diced

1 tablespoon parsley

½ cup + 2 tablespoons sugar

½ tablespoon lemon juice

Pinch of salt

8 ounces goat cheese, softened

  1. In a medium bowl mix together cranberries, green onion, cilantro, jalapeño, parsley, sugar, lemon juice and salt. Stir gently until combined. Cover and let sit for 50-60 minutes.
  2. Use your hands to form the goat cheese into a ball. Using a colander, strain the liquid out of the cranberry mixture. Roll the cheese ball in the mixture until well covered. Place in refrigerator until ready to serve.
  3. Lightly toast the bread and cut into triangles. Serve alongside cheese ball.
