
Cranberry Jalapeño Cheese Ball & Toast Points

Ingredients:
3 slices eureka!® Grainiac® Organic Bread, quartered
1½ cup cranberries, diced
⅛ cup green onion, chopped
⅛ cup cilantro, chopped
½ jalapeño, seeded and diced
1 tablespoon parsley
½ cup + 2 tablespoons sugar
½ tablespoon lemon juice
Pinch of salt
8 ounces goat cheese, softened
Directions:
- In a medium bowl mix together cranberries, green onion, cilantro, jalapeño, parsley, sugar, lemon juice and salt. Stir gently until combined. Cover and let sit for 50-60 minutes.
- Use your hands to form the goat cheese into a ball. Using a colander, strain the liquid out of the cranberry mixture. Roll the cheese ball in the mixture until well covered. Place in refrigerator until ready to serve.
- Lightly toast the bread and cut into triangles. Serve alongside cheese ball.
