2 slices eureka!® Seeds the Day® Organic Bread, toasted
2 slices pepper jack cheese
1 cup chicken, cooked and shredded
1 tablespoon green onions, chopped
1 teaspoon adobo sauce
½ chipotle chile (from adobo sauce can)
½ cup Greek yogurt
¼ cup cilantro
¼ teaspoon dill
Salt, to taste
- To make Chipotle Sauce, place adobo sauce, chipotle chile, Greek yogurt, cilantro, dill and salt in a blender and process until smooth.
- Place 2 slices of pepper jack cheese on 1 slice of bread. Top with chicken, desired amount of chipotle sauce and green onions. Cap with remaining slice of bread. Toast sandwich in toaster oven until cheese is melted (approximately 2-3 minutes).
