Avocado Black Bean Burger Stack

Ingredients:

8 slices eureka!® Seeds the Day® Organic Bread

2 cans seasoned black beans

1 cup bread crumbs

¼ cup onion, grated

1 egg

½ teaspoon chili powder

½ teaspoon garlic powder

1 pinch salt

1 pinch black pepper

1 dash hot sauce

2 teaspoons olive oil 

4 ears corn, grilled and sliced off cob

8 slices tomato

2 avocados, mashed

Directions:
  1. Drain the beans and place in a medium bowl and mash until they are broken up. Add bread crumbs, onion, egg, chili powder, garlic powder, salt, pepper and hot sauce. Stir until combined. Form mixture into 4 patties.
  2. Heat large skillet over medium heat. Lightly oil skillet and cook patties until browned on both sides (approximately 5 minutes per side).
  3. Lightly toast the bread. Place patties on the bottom bread slices and top with corn, tomatoes and avocado mash. Cap each with remaining toast, and enjoy.
