Vegan BLT Skewers

Ingredients:

4 slices eureka!® Seeds The Day® Organic Bread, toasted

4 slices vegan bacon

12 cherry tomatoes

4 lettuce leaves, torn into small pieces

Vegan basil mayo

 

Vegan Basil Mayo Ingredients:

¾ cup vegan mayonnaise

1 tablespoon garlic, minced

1 cup fresh basil leaves

1 teaspoon Kosher salt

Bamboo skewers

Directions:
  1. Toast bread and cut into cubes.
  2. Cook bacon according to package directions. Slice into smaller squares. 
  3. Make vegan basil mayo. Place mayonnaise, garlic, basil and salt in a food processor and pulse until combined. Smear a little mayo on 1 side of each bread cube.
  4. Build skewers. Load up with 1 bread cube, 1 bacon square, 1 tomato, 1 piece of lettuce, repeating in that order until skewer is full. Enjoy!
