Turmeric Egg Salad

2 slices eureka!® Saaa-Wheat!® Organic Bread

¼ cup mayo

½ teaspoon ground turmeric

Salt and pepper, to taste

4 hardboiled eggs

½ red bell pepper, diced

1 tablespoon fresh chives, minced

½ cup spring mix lettuce

  1. In a medium bowl, combine mayo, turmeric, salt and pepper. Mix well.
  2. Chop eggs into cubes and add to bowl. Or place whole eggs in bowl and use a fork to mash to your desired texture. Add diced red pepper and chives to mixture and stir well to combine.
  3. Place spring mix lettuce on bottom slice of bread. Top with desired amount of egg salad and cap with second slice of bread.
