2 slices eureka!® Smoooooth Wheat® Organic Bread
1 tablespoon lemon juice
1 tablespoon olive oil
1 tablespoon fresh parsley, chopped & divided
1 teaspoon minced garlic
½ teaspoon paprika
¼ teaspoon dried oregano
1 boneless skinless chicken breast
¼ teaspoon salt
¼ teaspoon pepper
2 tablespoons hummus
1 tomato, sliced
½ yellow pepper, thinly sliced
¼ red onion, thinly sliced
- Combine lemon juice, olive oil, parsley, garlic, paprika and oregano in a plastic bag. Pierce chicken with fork a few times, sprinkle with salt and pepper and place in the plastic bag with the dressing. Let sit for at least 20 minutes in refrigerator.
- Remove chicken and place on grill until cooked through (approximately 5-6 minutes per side, depending on thickness).
- Spread hummus on 1 slice of bread. Top with grilled chicken, sliced tomato, yellow peppers, onion and parsley.
- Top with second slice of bread and enjoy!
