Spring Chicken Sammie

2 slices eureka!® Smoooooth Wheat® Organic Bread

1 tablespoon lemon juice

1 tablespoon olive oil

1 tablespoon fresh parsley, chopped & divided

1 teaspoon minced garlic

½ teaspoon paprika

¼ teaspoon dried oregano

1 boneless skinless chicken breast

¼ teaspoon salt

¼ teaspoon pepper

2 tablespoons hummus

1 tomato, sliced

½ yellow pepper, thinly sliced

¼ red onion, thinly sliced

  1. Combine lemon juice, olive oil, parsley, garlic, paprika and oregano in a plastic bag. Pierce chicken with fork a few times, sprinkle with salt and pepper and place in the plastic bag with the dressing. Let sit for at least 20 minutes in refrigerator.
  2. Remove chicken and place on grill until cooked through (approximately 5-6 minutes per side, depending on thickness).
  3. Spread hummus on 1 slice of bread. Top with grilled chicken, sliced tomato, yellow peppers, onion and parsley.
  4. Top with second slice of bread and enjoy!
