4 slices eureka!® Seeds The Day® Organic Bread

1 avocado

½ cup spinach

½ cup baby kale

⅓ cup parsley

1 tablespoon pesto

½ teaspoon salt

½ teaspoon freshly ground black pepper

2 tablespoons butter

2 slices provolone cheese

½ cucumber, sliced thin

½ cup microgreens

  1. In food processor, pulse avocado, spinach, kale, parsley, pesto, salt and pepper until smooth. Set aside.
  2. In medium skillet over medium heat, melt butter. While butter melts, build sandwich by laying 1 slice cheese on 1 bread slice. Top with avocado mixture, cucumber slices, microgreens, second cheese slice and remaining slice of bread.
  3. Transfer sandwich to skillet and cook for about 2–3 minutes, or until the bottom is toasted. Carefully flip sandwich and repeat.
