Simply Radishing Toast

4 slices eureka!® Top Seed® Organic Bread, toasted

2 radishes, sliced thin

¼ cucumber, sliced thin

1 tablespoon scallions, chopped

1 teaspoon parsley, chopped

1 tablespoon lemon juice

1 teaspoon apple cider vinegar

4 tablespoons olive oil, divided

½ teaspoon salt, divided

½ teaspoon freshly ground black pepper, divided

½ cup vegan ricotta

¼ cup microgreens

  1. In large bowl, mix together radishes, cucumbers, scallions, microgreens, parsley, lemon juice, apple cider vinegar, 3 tablespoons olive oil and ¼ teaspoon each salt and pepper. Set aside.
  2. In small bowl, mix together vegan ricotta, 1 tablespoon olive oil and ¼ teaspoon each salt and pepper. Spread ricotta mixture on toast.
  3. Top with salad mixture and garnish with microgreens. If desired, sprinkle with additional salt and pepper.
