Plum Delicious Panzanella

4 slices toasted eureka!® Organic Bread (any variety)

2 tablespoons olive oil

1 tablespoon garlic, peeled

1 grapefruit, divided

2 plums, cubed

1 avocado, cubed

2 cups spring mix lettuce

½ cup feta cheese

Grapefruit Dressing


Grapefruit Dressing Ingredients:

¼ cup olive oil

¼ cup red wine vinegar

1 tablespoon honey

Juice from ½ grapefruit

1 teaspoon black pepper

¼ teaspoon fresh thyme

  1. Heat oven to 350°F. Place bread slices on baking sheet and, using a pastry brush, brush olive oil onto both sides of each slice. Rub each slice of bread with a peeled garlic clove.  Toast bread for about 5 minutes. Flip and bake for another 5 minutes. Let cool before cubing bread. Set aside.
  2. Cut grapefruit in half, reserving 1 half for the dressing. Cut remaining grapefruit half into segments. Cut each segment in half and place in a small bowl. Set aside.
  3. Prepare dressing. In a medium bowl, whisk together olive oil, red wine vinegar, honey, grapefruit juice, pepper and thyme. Fold in grapefruit, chopped plums and avocado. Fold in bread cubes.
  4. Divide mixed greens among two plates. Top with grapefruit-bread mixture. Sprinkle with feta cheese and enjoy.
