Grilled Nectarine Toast

2 slices eureka!® Saaa-Wheat!® Organic Bread, toasted

1 nectarine

½ cup balsamic vinegar

¼ cup brown sugar

1 teaspoon honey

1 teaspoon butter

Fresh thyme sprigs

4 tablespoons mascarpone cheese

  1. Fire up the grill. Slice nectarine in half, remove pit, and place cut side down on hot grill grate. Let cook, undisturbed, until nectarine begins to soften and caramelize (approximately 5 minutes). Remove from grill and set aside until cool enough to handle.
  2. Combine balsamic vinegar, brown sugar, honey and butter in a small saucepan and bring to a boil. Turn down heat. Let simmer for 5-10 minutes and remove from heat. The sauce will thicken as it cools.
  3. In a small skillet over medium heat, gently toast thyme sprigs. Set aside.
  4. Spread mascarpone on both toast slices. Cut grilled nectarine halves into several slices and arrange atop cheese. Sprinkle with thyme, drizzle with balsamic glaze and enjoy.
