2 slices eureka!® Saaa-Wheat!® Organic Bread, toasted
½ cup balsamic vinegar
¼ cup brown sugar
1 teaspoon honey
1 teaspoon butter
Fresh thyme sprigs
4 tablespoons mascarpone cheese
- Fire up the grill. Slice nectarine in half, remove pit, and place cut side down on hot grill grate. Let cook, undisturbed, until nectarine begins to soften and caramelize (approximately 5 minutes). Remove from grill and set aside until cool enough to handle.
- Combine balsamic vinegar, brown sugar, honey and butter in a small saucepan and bring to a boil. Turn down heat. Let simmer for 5-10 minutes and remove from heat. The sauce will thicken as it cools.
- In a small skillet over medium heat, gently toast thyme sprigs. Set aside.
- Spread mascarpone on both toast slices. Cut grilled nectarine halves into several slices and arrange atop cheese. Sprinkle with thyme, drizzle with balsamic glaze and enjoy.
