Crunchy Carrot-Topped Toast

1 slice eureka!® Organic Bread, toasted 

½ avocado

1 teaspoon lemon juice

Salt and pepper to taste

1 lettuce leaf

⅓ cup multi-colored carrots, shredded

½ cucumber, sliced thin

Yogurt dressing (recipe follows)


Yogurt Dressing Ingredients:

⅓ cup Greek yogurt

1 teaspoon basil, minced

1 tablespoon mushroom, diced

1 teaspoon garlic, minced

  1. Mash avocado with lemon juice and a pinch each of salt and pepper. Spread onto toast.
  2. Layer on lettuce, shredded carrots and cucumber slices.
  3. Prepare the dressing. In a small bowl, mix Greek yogurt, basil, mushroom and garlic.
  4. Spoon on top of toast.  Enjoy!
