4 slices eureka!® Organic Bread
½ head cauliflower
⅓ cup green onions, diced
1 carrot, diced
1 celery stalk, diced
1 tablespoon olive oil
1 teaspoon garlic, minced
1 (6-ounce) can tomato paste
¼ teaspoon Worcestershire sauce
1½ tablespoons white vinegar
2 teaspoons buffalo sauce, to taste
¼ cup spinach leaves
Ranch dressing, if desired
- Chop cauliflower into tiny pieces. Finely chop the onion, carrots and celery.
- Heat olive oil in a large sauté pan over medium heat. Add onions and garlic. Sauté for 2-3 minutes, stirring occasionally, until softened. Add carrots and celery. Sauté for 3-4 minutes, stirring occasionally, until softened. Add in cauliflower and stir. Add tomato paste, Worcestershire, vinegar and buffalo sauce. Stir to combine.
- Turn the heat to low and cover the pan. Let simmer for about 10 minutes, uncovering to stir every few minutes. Remove from heat.
- Lay spinach leaves on 1 bread slice then spoon mixture onto spinach. Drizzle with salt and ranch dressing, if desired, and top with second bread slice.
- Serve warm and enjoy!
