Buffalo Cauliflower Sammie

4 slices eureka!® Organic Bread

½ head cauliflower

⅓ cup green onions, diced

1 carrot, diced

1 celery stalk, diced

1 tablespoon olive oil

1 teaspoon garlic, minced

1 (6-ounce) can tomato paste

¼ teaspoon Worcestershire sauce

1½ tablespoons white vinegar

2 teaspoons buffalo sauce, to taste

¼ cup spinach leaves


Ranch dressing, if desired

  1. Chop cauliflower into tiny pieces. Finely chop the onion, carrots and celery.
  2. Heat olive oil in a large sauté pan over medium heat. Add onions and garlic. Sauté for 2-3 minutes, stirring occasionally, until softened. Add carrots and celery. Sauté for 3-4 minutes, stirring occasionally, until softened. Add in cauliflower and stir. Add tomato paste, Worcestershire, vinegar and buffalo sauce. Stir to combine.
  3. Turn the heat to low and cover the pan. Let simmer for about 10 minutes, uncovering to stir every few minutes. Remove from heat.
  4. Lay spinach leaves on 1 bread slice then spoon mixture onto spinach. Drizzle with salt and ranch dressing, if desired, and top with second bread slice.
  5. Serve warm and enjoy!
