Avocado Flower

1 slice eureka!® Organic Bread, toasted

½ avocado

1 teaspoon lemon juice

¼ cup sprouts

Black pepper, to taste

  1. Slice the avocado in half lengthwise. Remove the pit and outer skin and place flat side down on cutting board. Thinly slice the avocado widthwise, but be sure to keep all the slices together. (Aim for each slice to be around 2-3mm thick.)
  2. Use your hands to gently fan out the avocado slices so that they form a long line. Slices should touch and even overlap each other. Starting from one end of the line, use hands to gently curl avocado slices toward the center. Continue curling until a rose shape is achieved. Sprinkle with lemon juice.
  3. Top toast with sprouts. Using a spatula, carefully transfer avocado rose to toast. Garnish with freshly ground black pepper and enjoy.


Note: For best results, choose an avocado that’s ripe but still firm.
